Abstract
Hotel and catering management education has been the subject of considerable criticism from industrialists. This paper considers some of the most common criticisms made and examines how hotel and catering management educators respond. Data from a research project on hotel and catering management education is employed throughout the paper. In so doing, it is contended that criticism about vocational relevance and practical applicability cannot be understood without parallel consideration of the nature of the hotel and catering industry and its education provision.
